Ask a professional baker why they weigh ingredients and you'll hear the same two words: reproducibility. Cups measure how much space an ingredient fills; weight measures how much ingredient you have. Only one of those is the same every time.
The scoop problem, quantified
All-purpose flour runs from ~113 g per sifted cup to ~145 g per scooped-and-packed cup. That is a 28% swing in the single ingredient that sets bread and cake structure — enough to be the entire difference between tender and tough. "Spoon and level" (fluff, spoon into the cup, level with a knife) lands near 120 g and is the standard behind most published US recipes. Our cups-to-grams converter uses exactly that convention.

Why US recipes didn't switch (and why yours should anyway)
Volume stuck around for cultural and hardware reasons — measuring cups are cheap, scales were not, and recipe inheritance is conservative. None of those apply anymore: a digital scale costs less than a single failed bake's ingredients. The switch pays immediately in three places: sticky ingredients (no more honey-glued cups), scaling (multiply weights by 1.5 with zero fraction juggling), and cleanup (fewer measuring devices to wash).
Making the transition
Convert your five most-baked recipes once, using the reference table above, and write the gram weights on the card. Buy a scale that reads in 1-gram increments with a tare button — tare (zero out) between additions and the whole recipe builds in one bowl. After a month of gram-weight baking, the measuring cup starts to look like what it is: a rough estimate wearing a lab coat.
