The standard conversion ranges

Slow cooker conversion charts published by manufacturers and cooking references agree on three tiers, which our calculator applies to your oven time:

  • Oven 15–30 minutes β†’ Low 4–6 hours / High 1½–2 hours
  • Oven 35–45 minutes β†’ Low 6–8 hours / High 3–4 hours
  • Oven 50 minutes–3 hours β†’ Low 8–12 hours / High 4–6 hours

One hour of oven braising β‰ˆ 4–6 hours on Low or 2 hours on High; the ratio isn't perfectly linear between settings β€” Low runs about twice the High time, not double the temperature's effect on browning.

Slow cooker rules the charts don't tell you

  • Cut liquid by a third to a half. Nothing evaporates in a sealed crock β€” braising liquid arrives at full strength.
  • Brown first when you can. Ten minutes of searing replaces the Maillard flavor the oven would have built.
  • Dairy and pasta go in late. Milk splits and pasta blows out over long cooks β€” stir them in for the final 30–60 minutes.
  • Keep the lid on. Every peek vents 20+ minutes of accumulated heat.

What converts well (and what doesn't)

Stews, chili, pulled pork, curries, braised chicken thighs, bean dishes, and broth-based soups convert beautifully. Things that don't: anything needing browning as the star (roast chicken skin), delicate fish, most baking, and quick-cooking vegetables that turn to mush on the Low tier.
