Area is the whole game

Batter depth β€” not pan shape β€” sets baking time and texture. So pan substitution is an area comparison: batch factor = target pan area Γ· original pan area. Make 1.35Γ— the batter for an 8-inch square instead of two 8-inch rounds, 0.5Γ— for a 9Γ—5 loaf instead of a 9Γ—13 sheet.

Areas use standard pan dimensions: rounds by Ο€rΒ² (8-in round β‰ˆ 50 sq in, 9-in β‰ˆ 64 sq in), squares by widthΒ² (8-in β‰ˆ 64, 9-in β‰ˆ 81), the 9Γ—13 rectangle β‰ˆ 117, and loaf pans by their rim area (9Γ—5 β‰ˆ 45, 8Γ—4 β‰ˆ 32). Bundt areas vary by brand, so we use a conservative 10-inch β‰ˆ 87 sq in and label it approximate.

Adjusting the bake, not just the batch

  • Fill pans half to two-thirds full β€” never more. Overflow in a real oven is a smell you never forget.
  • Same depth, same time. Swapping a 9-in round for a 9-in square (nearly identical area) changes nothing.
  • Deeper batter, longer bake; shallower, shorter. Start checking at ΒΎ of the original time when batter is shallower, and add time in 5-minute increments when deeper β€” a skewer from the center is the referee.
  • Loaf pans bake slower per depth β€” a loaf holding a 9-in round's batter needs notably longer, covered with foil if it browns early.
